Carol Jean (Larsen) Shultz, 92, of Ellendale, died peacefully on Friday, December 31, 2021.

She was born December 23, 1929 in Minneapolis, Minnesota, the daughter of Anders “Bill” and Thea (Brekke) Larsen.  She attended Ellendale School and graduated in 1948.  After graduation she worked in the office at Wilsons in Albert Lea. 

On February 19, 1949, she married her high school sweetheart, Leonard “Lee” Shultz.  They made their home on a farm five miles southwest of Ellendale.  She worked on the farm and picked many eggs.  Carol and her sister, Mavis Langlie, started the “Lady Bug” thrift shop which they had for many years.  She was known for her chocolate chip cookies and lefse.

Carol enjoyed home interior design and decorating, which she did for over 20 years.  She had a very strong faith, attended church (First Lutheran in Ellendale) regularly, taught Sunday School and enjoyed Bible studies and circle at First Lutheran. 

Carol is survived by her two sons, Allan (Carol) Shultz and Marty (Wendy) Shultz; grandchildren, Greg (Nicole) Shultz, Brian (Carrie) Shultz, Kristin (Randy) Baana, Brett (Trista) Shultz, Heather (Brady) Hullopeter, Jessica (Darren) Peters and Nicholas Shultz; great-grandchildren, Ella, Layla, Ava, Addison, Riley, Ethan, Katelyn, Annabelle, Colin, Reid, Kayla, Ethan, Collin, Noah, Liam and Kayleigh; brother, Kenneth (Delores) Larsen and sister, Mavis Langlie.

She was preceded in death by her parents, Bill and Thea; husband, Lee Shultz; daughter Lori Shultz; great-grandson, Brayden Hullopeter; brother-in-law, Orville Langlie and sister-in-law, Mary Etta Larsen.

A funeral service will be held at 11 a.m. on Saturday, January 8, 2022 at First Lutheran Church in Ellendale with visitation one hour prior.  Pastor Kyle Smith will officiate.  Interment will be in First Lutheran Cemetery in Ellendale followed by a lunch reception in the church basement.
